Berry Summer Salad


Okay, so maybe I should post one of my favorite recipes I make each week. I'll see how it goes. Today I made a Berry Summer Salad. I have been craving this because it is very similar, if not identical, to the one at Zupas here in Provo (called "Nuts About Berries Salad), and because I'm ready for summer to be here already! I might add a little extra sugar next time to the dressing...that's usually my philosophy on everything. Oh, and I forgot to buy green leaf lettuce, so I used iceberg instead...it was still good. It would look prettier (because that's important, right?) if it was the green leaf. Here is the recipe:


Berry Summer Salad


1 head green leaf lettuce, torn into pieces

1 bunch fresh spinach, washed, dried and torn

2 pints fresh strawberries, halved


Dressing:

1/3 cup sugar

2 tablespoons sesame seeds

1 tablespoon poppy seeds

1 1/2 teaspoons minced onion

1/4 teaspoon Worcestershire sauce

1/4 teaspoon paprika

1/2 cup vegetable oil

1/4 cup apple cider vinegar


Place lettuce, spinach and strawberries in a bowl; do not mix. Combine dressing ingredients in a blender or food processor and blen until mixed and thickened. Just before serviing, toss salad gently with dressing.


**I sugared some chopped almonds, added blackberries, and we added our own individual dressing instead of mixing it all together first. I would mix it all together if it was for a crowd, but it was just me and Cody. I tend to like more dressing than Cody anyway. I think sugared pecans would be good too. Hope you enjoy!
